Aidan Chapman The Phoenix Bakery has arrived in Weymouth. Created by world class baker Aidan Chapman and his wife Lisa, this artisan bakery and café makes, bakes and serves award winning fresh, organic, hand-made breads, pastries, cakes and savouries. Employing only the sponge dough method of baking and using only organic flour, the Phoenix produce has low salt and yeast content and offers a selection of wheat free, yeast free products. Many of the used ingredients are sourced locally such as fruit and vegetables from Pear Tree Cottage in Weymouth and organic flour from Cann mills in Shaftesbury.

Aidan Chapman has been baking for 22 years and his career includes 5 years as Head Baker at The Celtic Bakery in London. Moving to Dorset in 2005 he set up Leaker’s Bakery in Bridport and The Town Mill in Lyme Regis. He has appeared on the River Cottage television series a number of times and teaches the bread courses at River Cottage headquarters.
 
The Phoenix School also operates out of the bakery offering a Monday Baking School and Saturday Apprentice days plus the option to join the  Real Bread Campaign.
