Aidan has been baking for 28 years and his career includes 5 years as Head Baker at The Celtic Bakery in London. Moving to Dorset in 2005 he set up Leaker’s Bakery in Bridport and The Town Mill in Lyme Regis. He then went on to co-found the Phoenix Bakery and cafe in Weymouth with his wife and business partner Lisa Chapman. The Phoenix was in operation for five years in which time many good friends were made and Aidan was able to hone his skills as a great teacher of real bread as well as a great baker. This has led to his current position as the Bread Ahead teacher in Borough Market, London. Aidan has appeared on the River Cottage television series a number of times and continues to teach the bread courses and a new Advanced Bread course at River Cottage headquarters.
