Wild garlic mini soda
 
Its that time of year again, one of natures gifts is in full bloom and sending every foraging cook, chef x baker into a frenzy! Wild garlic is upon us again and every year its sweet delicate flavour is put to good use at the bakery!
This simple soda bread is a great showcase for its wonderful cooking properties and served at a barbie will have all your mouths watering for more!

500g strong white flour, 100g jumbo oats, 10g salt, 20g baking powder,100g wild garlic, 100ml olive oil and 400ml milk.

1. Place flour, oats, salt and baking powder into a mixing bowl and fully combine.
2. Finely chop the wild garlic( saving 10 leaves and flower heads if you have them).
3. Add to the dry mix and stir in.
4. Make a well in the centre of the mix and pour in the oil and milk.
5. Shape your hand like a fork and gently combine the mixture to form a dough. The less you handle this dough the lighter your bread will be.
6. Turn out onto a floured surface.
7. Divide the dough into 10 equal pieces and place onto a parchment lined tray.
8. Push the half leaf and flower head into the centre of the bread.
9. Leave to stand for 10mins
10. Place into a pre heated oven 220c or gas mark 8 for 15 mins
11. Take out of the oven and prepare yourself for a aroma overload!!!!


 Serve fresh out of the oven with butter! Or why not take them to a barbecue split in two and fill with the finest burger! I guarantee you will be throwing those pappy baps in the bin!

If you can't get hold of any wild garlic, fresh chives are the perfect alternative
