Chestnut, Sage and Onion Spelt Stuffing Loaf
![]() Carrying on with our wholegrain bread mission this month, we have come up with a mighty Spelt loaf to go up against the White loaf for your Boxing Day turkey sandwich!
This loaf is full of the flavours of Christmas! The creamy chestnuts, bite of red onion and a subtle flavour of sage, all held together with a flavoursome Spelt dough! Surely a perfect match for a turkey and cranberry wholegrain sandwich! Day one
300g wholegrain spelt flour, 10g yeast and 200ml water
Place flour into a bowl, crumble in the yeast. Add the water and mix for 6min until you have a nice smooth dough.
Cover with a tea towel and place into the fridge for 24 hours. This will rise slowly and develop a great flavour for your main dough. Day two
600g wholegrain Spelt flour, 5g salt, 10g yeast, 400ml water, 1 finely chopped red onion, 200g roughly chopped cooked chestnuts and 6 chopped sage leaves.
Take your dough out of the fridge; it should of risen slightly and have a slightly alcoholic aroma.
Add the flour, salt and yeast,(make sure you keep the salt away from the yeast) pour in the water and bring together to form a dough. Tip onto a floured surface and develop your dough for about 5mins.Place dough back into bowl and add the onions, chestnuts and sage. Gently mix these into the dough until fully combined. Heavily oil a 10" loose bottomed cake tin. Place the dough into the tin and press the dough out to fill the tin. Brush the whole surface of the dough with olive oil then press your fingers into the dough to create a nice dimple affect. For decoration:
12 whole sage leaves
Push the sage leaves into the top of the dough; 8 round the edge and 4 in the middle.
Cover tin with a tea towel and leave to prove for.1 hour.
Your bread should have almost doubled in size! Place into a preheated oven gas mark 8/230c. Bake for 20 mins then turn your tin round. Bake for another 15 mins, take out of the oven and glaze with olive oil. Release from tin and leave to cool and savour the smell of Christmas! Stuck for Xmas gift ideas?
