Sourdough pancakes

Sourdough Pancakes
If there is one foodie day that gets the Chapman household going its pancake day! My children love the quick process of making pancakes and the joy of trying different toppings and fillings. The fact that they can be involved in the whole process really captures there creative side and gets there taste buds craving for more! This recipe is really simple and another great way to use your sourdough starter!

The night before you want to make your pancakes-

Measure 1 cup of your starter into a bowl, mix in 1 cup of flour and 1 cup of milk.
Whisk until frothy cover with a cloth and leave out at room temperature overnight.

The next morning

Add 1 beaten egg, 2 teaspoons of olive oil, 1 teaspoon of baking powder, 1/2 teaspoon of salt and 1 tablespoon of caster sugar.

Whisk again until nice and frothy and leave to stand for 1hour.

Heat some oil in a heavy bottomed frying pan pour in enough mixture to just cover the pan
Cook for 30 seconds then flip over and cook the other side!
Repeat with the rest of the mixture
Serve warm with a topping of your choice! My kids love maple syrup but myself you can't beat good old lemon and sugar!
Once you have tried these simple sourdough pancakes there will be no going back there depth of flavour will amaze and daze you! Try stuffing them with various savoury fillings covering them in a creamy cheese sauce and baking them in the oven!
